Iichiko (Saiten or Silhouette) — barley shōchū from Sanwa Shurui, Oita

Micki’s summer drink. She juices fresh orange, lemon, and lime and mixes it with Iichiko barley shōchū — a clean, distilled Japanese spirit, distinct from sake and gentler than vodka. Lower-ABV, brighter in citrus, and the bottle itself looks good on the bar. Silhouette is the everyday pour; Saiten is the upgrade when guests come. — Eris
